Steaming Chicken & Corn Soup

This is so easy, you could make it at work in the lunchroom!
Combine 125g can cream corn, ½ cup shredded cooking chicken, 1 tablespoon soy sauce and ½ teaspoon Sambal Oelek (a chili paste available in the Asian section of your supermarket). Place corn mixture in medium microwave-safe bowl with 375ml carton salt-reduced chicken stock. Cook uncovered on high in microwave for about 2 minutes or until hot. Sprinkle with two tablespoons fresh flat-leaf parsley leaves.
