Beef & Ale with potato mash & mustard

Serves 4

500g                              beef round steak, chopped coarsely

2 small (160g)           onions, roughly chopped

2 cloves                        garlic, crushed

2 large (360g)            carrots, roughly chopped

2 tablespoons            plain flour

250ml  (1 cups)         beer

750ml (3 cups)         beef stock

800g                           potatoes, halved

250ml (1 cup)           skim milk

2 tablespoons           seeded mustard

Cook steak, in batches, in lightly oiled, large saucepan. Add onion, garlic and carrot; cook, stirring, until onion is soft. Stir in flour; cook 1 minute. Add ale and stock; simmer, covered, about 1 hour, 15 minutes or until beef is tender.

Meanwhile, boil, steam or microwave potato until tender; drain, Mash potato with milk until almost smooth. Stir in mustard until just combined. Serve beef with potato.

Per serve, 1701kg (405 calories), 7.4g fat.
